Adding a small amount of sugar to marinades not only enhances flavour but also helps tenderize meats and interacts with proteins in meat, tofu, or other alternatives to create a rich colour. Makes 3/4 cup (175 ml) of marinade.
Ingredients
| Garlic, minced | 3 cloves |
| Orange juice | 1/4 cup (60 mL) |
| Hot sauce | 1/4 cup (60 mL) |
| Vegetable oil | 1/4 cup (60 mL) |
| Brown sugar | 1 tbsp (15 mL) |
| Salt | 1 tsp (5 mL) |
| Cayenne pepper | 1/4 tsp (1 mL) |
| Black pepper | 1/2 tsp (2 mL) |
Instructions
- Mix all ingredients.
- Leave meat in the marinade for at least two hours. Use as a marinade for spareribs, pork chops, chicken, fish or tofu.
